Great Idea For An Athlete's Summer Lunch!!

Athlete's Summer Panzanella - Here a great idea for a quick and very healthy lunch, regardless whether you are an athlete or not - but it is a good start.
Ingredients: 1 tsp of olive oil, 2 slices of whole wheat bread, Salt and Pepper to taste, 1 cup of lettuce, 1 tomato sliced, 1/2 red pepper diced, 1/2 cup of cucumber thinly sliced, 1 garlic glove crushed, 1 tbsp basil, 1tbsp capers, 1/2 cup olives, 1/2 small onion, 1 tbsp balsamic vinegar, and 8 oz fresh tuna steak. HOW TO MAKE IT: 1: Add 1/2 tsp olive oil to a nonstick skillet and place over high heat. Thrown in bread, sprinkle with salt and pepper, and toast lightly on both sides. 2: Put the lettuce, tomato, red pepper, cucumber, garlic, basil, capers, olives, and onion in a bowl and toss with olive oil and balsamic vinegar. 3: set toast aside, add tuna to skillet. sear three minutes each side. 4: Put bread into serving bowl first, then cover with salad mixture so bread soaks up flavor. 5: Top with sliced tuna and serve. THE NUMBERS: Calories: 663, Protein: 66g, Carbohydrates: 54g, Fat: 22g, Fiber 13g. HAVE FUN AND ENJOY IT. I MADE MYSELF AND LOVED IT!
